A surfactant is a special substance, like soap, that gets in between water molecules and breaks up their surface tension. Once surface tension is broken, water can spread out, soak in, and clean much more easily.

Freddy sprinkled pepper on top of a bowl of water, then touched the center with a drop of dish soap. The pepper instantly raced away to the edges of the bowl — because the surfactant broke the surface tension that was holding the water (and the pepper) together!

This is exactly why soap helps wash away germs and dirt on your hands. The surfactant in soap breaks down the surface tension and helps lift grime away from your skin so water can rinse it off.
